Food+Cooking

Try dad's new recipe,"Norweigan Lace Cookies".

½ cup butter
1 ½ cup regular rolled oats
1 egg
2/3 cup granulated sugar
1 tsp baking powder
1 tbsp flour

Melt butter and pour over oats. Beat egg until light, then beat in sugar. Add baking powder and flour, blending well. Combine with oats and butter mix. Drop by the teaspoonful onto baking parchment, 2-3 inches apart. Bake at 350o F until slightly browned around the edges (1/2 inch brown rim) (8-10 minutes). Remove parchment from pan immediately. Cool 1 minute before removing cookies from pan parchment.

Options:

Add 2 tsp vanilla extract to batter

Allowing batter to rest for ½ an hour before baking makes for better consistency.
